👩‍🍳Step-by-step instructions
Activating the yeast
In a bowl, mix warm milk + 1 tablespoon of sugar (of the total amount) + yeast. Let rest for 10-15 minutes until it starts to foam.

Make the dough.
Place the flour in a large bowl and make a well in the center. Add the eggs, remaining sugar, salt, butter, and activated yeast. Mix until combined.

Knead
Knead for 8-10 minutes until the dough is smooth, elastic and slightly sticky (but still manageable).

First rise

Form a ball and place in a greased bowl. Cover and let rise for 1 hour or until the doughnuts have doubled in size.

Shape the doughnuts
Roll out the dough to a thickness of 1.5 cm. Cut out the doughnuts using cookie cutters or two glasses (one large and one small for the middle). Place them on a baking sheet lined with baking paper.

Second rising
Cover with a towel and let rise for 30 minutes.

Frying
Heat the oil over medium heat. Fry in batches until golden brown on both sides. Remove

and let drain on paper towels.

Decorate.
While still warm, roll in granulated sugar.

Yield: 15–16 large, fluffy doughnuts.
Saving Tips

Do not overheat the oil: if it is too hot, the donuts will brown on the outside but remain raw on the inside.
If you want them filled (caramel, pastry, chocolate), fill them only after they have cooled.
