Veal osso buco in sauce is a great classic of traditional cuisine. ✨ Thanks to slow cooking, the meat becomes so tender that it easily comes off the bone, while the pith provides a unique and deep flavor. Accompanied by a vegetable, wine and broth sauce, this dish is perfect for a special meal or to enjoy an authentic homemade stew.

🍖 For the osso buco
🍖 4 pieces of veal osso buco (300-350 g each)
🌾 2 tablespoons wheat flour
🧂 Salt to taste
⚫ Freshly ground black pepper
🫒 3 tablespoons extra virgin olive oil
🥕For the sauce
🧅1 large onion, chopped
🥕 2 carrots, sliced
🌿 2 celery stalks, chopped
🧄 4 cloves garlic, minced
🍅 250 g chopped tomatoes
🍷 200 ml white or red wine
🥣 700 ml beef stock
🌿 2 bay leaves
🌿 1 teaspoon thyme
🌿 1 teaspoon rosemary
🧂 Salt to taste
⚫ Freshly ground black pepper
🌿 For the decoration
🌿 Chopped fresh parsley
🍋 Lemon zest (optional)
👩🍳 How to prepare veal osso buco in sauce
🍖 1. Sear the meat
Season the osso buco with salt and pepper and lightly coat it with flour. Heat the oil in a large casserole dish and brown for 3 to 4 minutes on each side, until a golden crust forms. Remove it and set aside.
🧅 2. Prepare the sofrito
In the same casserole dish, sauté the onion, carrot, celery and garlic for 8 to 10 minutes, until the vegetables are tender.
🍅 3. Add the tomato and wine
Add the crushed tomatoes and cook for another 5 minutes. Pour in the wine and let it reduce for a few minutes so that the alcohol evaporates.
