*Cyril Lignac-style meatballs: the dish that everyone agrees on*

*Ingredients for 4 to 6 people*
*For the meatballs:*
– 600 g minced beef or beef/veal mixture
– 1 egg
– 2 tablespoons breadcrumbs
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 3 tablespoons chopped flat-leaf parsley
– 1 teaspoon sweet paprika
– Salt and pepper
*For the tomato sauce:*
– 1 x 400 g tin of crushed tomatoes
– 1 onion
– 2 cloves of garlic
– 1 teaspoon sugar
– 1 teaspoon of herbes de Provence
– 2 tablespoons olive oil
– Salt and pepper
*Preparation:*
1. *Prepare the meatballs*
In a bowl, mix the minced meat, egg, breadcrumbs, onion, garlic, parsley, paprika, salt and pepper.
Knead well by hand. Form into nut-sized balls.
2. *Sear the meatballs*
In a large sauté pan, heat 1 tbsp of olive oil. Brown the meatballs for 2 to 3 minutes on each side. Set them aside.
3. *Make the sauce*
In the same frying pan, sauté the onion and garlic for 3 minutes. Add the crushed tomatoes, sugar, herbes de Provence, salt and pepper. Simmer for 5 minutes.
4. *The final cooking*
Return the meatballs to the sauce. Cover and simmer over low heat for 20 minutes. The sauce will thicken and the meatballs will be melting.
Serve piping hot with pasta, rice or bread for gravy 👌
*The little + of chef:*
The pinch of sugar in the sauce removes all the acidity from the tomato. And don’t skimp on the fresh parsley at the end!
