For the strawberry layer
100 g fresh strawberries, peeled and sliced
1 tbsp granulated sugar
1 tbsp fresh lemon juice
For the cream layer
240 ml whipping cream
2 tbsp sweetened condensed milk
1 tsp vanilla extract
1 tbsp granulated sugar
200 g mascarpone cheese, room temperature
For assembly
200 g Savoiardi cookies
Fresh strawberries for garnish
Fresh mint leaves (optional)
Step-by-step instructions
Preparing the strawberry mixture
Start by washing and hulling the fresh strawberries. Slice them thinly and place them in a medium bowl. Add one tablespoon of granulated sugar and one tablespoon of fresh lemon juice to the sliced strawberries. Gently toss the strawberries with the sugar and lemon juice, making sure all the pieces are well coated. Let sit for 10 to 15 minutes to allow the strawberries to release their natural juices and form a light syrup.
Preparing the cream layer
Pour the heavy whipping cream into a large bowl and beat with an electric mixer on medium speed. Gradually increase the speed until soft peaks form. Add the sweetened condensed milk, vanilla extract, and the remaining tablespoon of sugar. Continue beating until stiff peaks form, being careful not to overbeat and form butter.
