Strawberry sorbet recipe: refreshing and easy

Prepare the strawberries: Wash the fresh strawberries thoroughly under cold water, then remove the stems. Cut them into halves or quarters for easy blending. If using frozen strawberries, let them thaw slightly in the refrigerator for 30 minutes to make them easier to work with. Place the strawberries in a blender or food processor.

2. Make the syrup.
In a small saucepan, combine the sugar and water. Heat over medium heat, stirring constantly, until the sugar is completely dissolved, about 2–3 minutes. Let the syrup cool to room temperature (or refrigerate to speed up the process). If using honey, add it directly without heating.

To puree, add the cooled syrup, lemon juice, and basil or mint leaves, if using, to a blender along with the strawberries. Blend until smooth and combined, about 1 to 2 minutes. If you don’t like the strawberry seeds, strain the puree through a sieve for a smoother texture.

4. Freezing sorbet
without an ice cream maker: Pour mixture into a shallow container (preferably metal for faster freezing). Cover and freeze for 3-4 hours. Every 30-45 minutes, scrape the mixture with a fork to break up any ice crystals and achieve a light texture. Repeat 3-4 times until the sorbet is firm but creamy.
With an ice cream maker: Pour mixture into an ice cream maker and churn according to manufacturer’s instructions (usually 20-30 minutes). Then transfer to a container and freeze for 1 hour to set.

5. Serving:
Remove the sorbet from the freezer 5 to 10 minutes before serving to soften it a little and make it easier to scoop. Serve in cups or glasses with an ice cream scoop. For an elegant presentation, garnish with fresh strawberries, mint leaves or a drizzle of berry coulis. For a sophisticated dessert, top it off with a glass of sparkling lemon water or sweet wine (Moscato).

Tips for homemade strawberry sorbet: Perfect strawberries
: For optimal flavor, choose ripe,

fragrant strawberries (season May-June). Frozen strawberries are a good off-season alternative, but make sure they do not contain added sugar.
Sugar: Adjust the amount according to the sweetness of the strawberries, taste the puree before freezing and add sugar or honey if necessary. For a less sweet version, reduce the amount of sugar to 70 g.
Texture: Without an ice cream maker, regular scraping in the freezer is necessary to prevent the sorbet from hardening too much. A powerful blender will ensure a smooth puree and reduce ice crystals.
Tonic: For an adult version, add 1 tablespoon of strawberry liqueur or Grand Marnier. For a mixed sorbet, replace some of the strawberries with raspberries or blueberries. For a creamy touch, add 50 g of plain yogurt to the puree.
