Strawberry cheesecake without baking – the simplest summer delicacy

If you’re looking for a spectacular yet super easy dessert, this no-bake strawberry cheesecake is the perfect choice. It is made with simple ingredients and does not require an oven. The soft biscuit base, velvety strawberry filling, and fresh strawberries make this cake a family favorite.

With its fresh taste and beautiful appearance, it is an excellent treat for birthdays, summer parties, coffee tables or weekend treats.

 

250 g sušenek Digestive

100 g melted butter

400 g cream cheese

300 ml whipped cream

250 g fresh strawberries

120 g powdered sugar

2 teaspoons vanilla sugar

8 g gelatin powder (or 5 gelatin slices)

3 tablespoons cold water

For decoration
250-300 g of fresh strawberries

  1. Create a
    base Gently crush the cookies.

Add the melted butter and mix until smooth.

Press the mixture into the bottom of the cake pan.

Place in the fridge for about 20 minutes.

  1. Prepare the strawberry mixture
    Blend the strawberries in a blender until smooth.

 

 

Beat the cream cheese, powdered sugar and vanilla sugar until smooth.

Add strawberry puree.

    1. Add the gelatin
      Mix the gelatin according to the instructions on the package.

 

Allow to cool for a while and add to the filling, stirring constantly.

  1. Whip the
    cream Beat the whipped cream until soft peaks form.

Carefully stir into the strawberry mixture.

This will make the filling light and airy.

  1. Assemble the
    cake Pour the filling over the cooled biscuit base.

Smooth the surface with a spatula.

Cover the pan with a lid and refrigerate for at least 6 hours, preferably overnight.

 

  1. Garnish
    Remove the cake from the pan.

Garnish with plenty of fresh strawberries just before serving.

Use strawberries that are as sweet and ripe as possible.

The cake tastes best the next day.

For a fresher taste, add a little lemon juice.

You can also use frozen strawberries once they are thawed and well drained.

Serving
tips Serve the pie cold with coffee, tea or sparkling wine.

with pieces of white chocolate

 

with fresh raspberries

 

with blueberries
