1 kg. fresh cow cheese (burgs type) or curd milk
4 eggs
100 gr. of molten butter
250 gr. of sugar
100 gr. of pastry flour
1/2 grated lemon peel

How to prepare Quesada Pasiega
A typical dish of Cantabria very tasty. Although there are many recipes of this sweet native to the Valley of the Pass, most carry curd milk or fresh cheese.
The first thing we have to do to cook the pasiega cheese is to melt the butter, and then beat it with the beaten eggs and the sugar in a bowl. We can melt it in the microwave.
Then grate the skin half a lemon, pour it in a bowl with cinnamon and add the fresh crushed cheese with your hands.

Mix everything with your hands and add this lumpy mixture to the egg mixture. It doesn’t matter if the dough has a lot of lumps or pieces, because they will go undone when cooked in the oven.

Preheat the oven to 200 degrees and put the cheese to cook 20 minutes. Then we go down to 150 degrees and leave it 10 minutes more.
