Ingredients
– 4 boneless, skinless chicken breasts
– 2.5 dl teriyaki sauce
– 2.5 dl pineapple juice
– 1 small pineapple, pitted and cut into rings
– 2 tablespoons honey
– 1 tablespoon minced garlic
– 1 tbsp freshly grated ginger
– 1 tsp sesame oil
– 2 teaspoons cornstarch
– Sesame seeds and sliced green onions for garnish
– Salt and pepper to taste
Instructions
1. Preheat the oven to 190°C and lightly grease a baking dish.
2. Season the chicken breasts with salt and pepper before placing them in the tin.
3. In a medium bowl, whisk together the teriyaki sauce, pineapple juice, honey, minced garlic, grated ginger and sesame oil to make the marinade.
4. Pour the marinade over the chicken, making sure each piece is evenly covered. Place the pineapple slices around the chicken.
5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
