INGREDIENTS:
• 8 oz cream cheese, softened
• 14 oz sweetened condensed milk
• 1/2 cup freshly squeezed lime juice (about 4–5 limes)
• Zest of 2 limes
• 1 tsp vanilla extract
• 2 cups heavy whipping cream
• 3 tbsp powdered sugar
• 2 cups graham cracker crumbs (about 14 crackers)
• 1/4 cup melted butter
• Extra lime slices and zest for topping
INSTRUCTIONS:
Beat the softened cream cheese until smooth and fluffy.
Add the sweetened condensed milk, lime juice, lime zest, and vanilla. Mix until completely combined and creamy.
In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
Fold half of the whipped cream into the lime mixture until smooth. Save the other half for layering.
Mix the graham cracker crumbs with melted butter until it looks like wet sand.
In a trifle dish or large glass bowl, start with a layer of graham cracker crumbs on the bottom.
Add a layer of the lime cream mixture, spreading it gently to the edges.
Add a layer of plain whipped cream.
Repeat the layers — crumbs, lime cream, whipped cream — until you reach the top.
Finish with a final swirl of whipped cream, then top with lime slices, extra zest, and a sprinkle of crumbs.
Chill for at least 3 hours before serving so the layers set and the flavors really come together.
The longer it sits, the more the graham cracker softens into the cream — which is exactly what you want. I like to make this the night before and let it chill overnight. Saving this one for your next potluck or summer gathering — trust me, it’s a showstopper.
