450 g beef brisket
240 ml bourbon
120 ml pure maple syrup
8 slices country bread
225 g grated cheddar
cheese Butter for spreading
4 Belgian-style waffles
Instructions
Place the beef brisket in the slow cooker. Pour bourbon and maple syrup over the brisket. Cook over low heat for 8 hours, or until the meat is tender and tears easily.
Remove the brisket from the slow cooker and tear it with two forks. Save baking juice if necessary. Grease one side of each slice of bread with butter. Heat a large skillet over medium heat. Place one slice of bread in the pan with the butter side down. Place the grated cheddar cheese on top, followed by a large portion of grated brisket. Place the second slice of bread on top with the butter side up. Bake the sandwich for 2-3 minutes on each side, or until golden and the cheese is completely melted. Carefully turn it over so that it browns evenly. Continue assembling and grilling the sandwiches until you have used up all of the bread, cheese, and brisket, resulting in four sandwiches. Reheat the waffles according to package directions or until hot and slightly crispy. Place each toasted cheese between two waffles to create a proper waffle cake.
