  • 2 bay leaves
  • 1 tablespoon salt
  • 1 teaspoon of black peppercorns
  • chopped parsley and chives – to taste
  • oregano or a mixture of Provençal herbs – to taste
  • dried chili pepper (pimenta calabresa) – optional, for a spicier flavor
