📝 Ingredients for 2 to 3 glasses
- 2 teaspoons dried butterfly pea flowers
- 150 g fresh or frozen blueberries
- 1 tablespoon honey or agave syrup
- 1 tablespoon fresh lemon juice
- 500 ml water
- A few ice cubes
- A few mint leaves for decoration
👩🍳 Step-by-step preparation
1. Prepare the infusion
Heat the 500 ml of water without necessarily bringing it to a rolling boil.
Add the dried butterfly pea flowers and let steep for about 10 minutes. The water will gradually take on a magnificent intense blue hue.
Then strain the infusion and let it cool.
2. Prepare the blueberries
Place the blueberries in a blender with the honey and lemon juice.
Blend until smooth. If you prefer a perfectly smooth drink, you can strain the blueberry puree using a fine sieve.
3. Mix
Pour the cooled infusion into a large pitcher.
Add the blueberry mixture and mix carefully until you get a nice purple color.
4. Serve chilled
Fill the glasses with ice cubes and pour in the drink.
Add a few whole blueberries and a mint leaf for an even more elegant presentation.

This is definitely one of the funniest features of this recipe!
The butterfly pea infusion naturally has an intense blue color. When you add an acidic ingredient like lemon juice, the color gradually evolves into purple and pinkish undertones.
