A sponge cake that rises like crazy – without baking powder!

Ingredients:
4 large eggs (room temperature)
1 cup sugar
1 cup plain flour
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)

In a separate bowl, beat the egg yolks with the sugar until light and fluffy. Gently mix the egg yolks with the egg whites and add the sifted flour – mix slowly from the bottom up. Pour the mixture into a parchment paper-lined mold and tap lightly to remove any bubbles . Bake at 175-180°C for approximately 25 minutes.
