🧀 Crispy cheese and garlic bread sticks – a simple low-carb snack
When the craving for garlic bread or something really cheesy comes, these crispy breadsticks are a good alternative. They are made without regular wheat flour and get their firm texture from cauliflower, eggs and cheese.
After an initial baking, the bottom is topped with even more cheese and garlic butter before everything is allowed to go back into the oven. The result is golden brown, cheesy sticks with crispy edges and lots of flavor.

- Garlic and herbs: Garlic butter, oregano and parsley give a classic garlic bread feeling.

Ingredients
Bones:
- 1 medium head of cauliflower, finely grated to about 5-6 dl cauliflower rice
- 1 egg
- 2 dl grated mozzarella or other mild cheese
- 1 tsp garlic powder
- 1 teaspoon dried oregano or Italian spice mix
- 1/2 tsp salt
- Freshly ground black pepper
Garnering:
- 2 dl grated cheddar, mozzarella or priest cheese
- 1 tablespoon melted butter
- 1 clove garlic, finely grated
- A little chopped parsley
Here’s how:
- Preheat the oven to 200°C and line a baking sheet with baking paper.
- Cook the cauliflower rice in the microwave for about 3-4 minutes to soften.
- Let the cauliflower cool slightly and then squeeze out as much liquid as possible with a clean kitchen towel. This is important to get a firmer and crispier bottom.
- Mix the cauliflower with eggs, 2 cups cheese, garlic powder, oregano, salt and pepper.
- Press the mixture onto the tray into an even rectangle, about 1 cm thick.
- Pre-bake for 15-18 minutes, until the bottom has browned and feels firm.
- Mix the melted butter with the grated garlic clove and a little parsley. Brush gently over the bottom.
- Sprinkle with the remaining cheese.
- Bake for another 8-10 minutes, until the cheese is melted, bubbly and golden brown.
- Let rest for about 5 minutes before cutting it into rods or squares.
🍅 Delicious to dip in
Serve with hot marinara sauce, garlic dip, ranch dressing, or guacamole. They are also great as a side dish for soup or salad.
