Slow Cooker Garlic-Herb Beef (Tender & Flavorful)
Tender, juicy beef slowly cooked with garlic, herbs, and a savory sauce until it practically falls apart with a fork. This easy slow cooker dinner is perfect for busy weeknights and comforting family meals.
Ingredients
- 2½–3 lbs beef chuck roast
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 5–6 cloves garlic, minced
- 1½ cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 1 medium onion, sliced
- 3–4 large carrots, cut into chunks
- 1½ lbs baby potatoes, halved
- 2 tablespoons butter
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Instructions
- Season the Beef:
Pat the beef chuck roast dry with paper towels. Season generously on all sides with salt and black pepper. - Sear the Beef:
Heat the olive oil in a large skillet over medium-high heat. Sear the roast for about 3–4 minutes per side, until nicely browned. This step adds extra flavor but can be skipped if you’re short on time. - Prepare the Slow Cooker:
Place the sliced onion, carrots, and potatoes in the bottom of the slow cooker. Put the browned beef roast on top of the vegetables. - Add the Garlic and Herbs:
Sprinkle the minced garlic, thyme, rosemary, and parsley over the beef. - Make the Cooking Liquid:
Whisk together the beef broth, Worcestershire sauce, and soy sauce. Pour the mixture around the beef. - Slow Cook:
Cover and cook on LOW for 8–9 hours or on HIGH for 4–5 hours, until the beef is very tender and easily pulls apart with a fork. - Finish the Sauce:
Transfer the beef and vegetables to a serving platter and cover loosely to keep warm. Pour the cooking liquid into a saucepan if desired. - In a small bowl, whisk together the cornstarch and cold water to make a slurry. Bring the cooking liquid to a gentle simmer and whisk in the slurry. Cook for 2–3 minutes, until the sauce thickens.
- Stir in the butter for a richer, silky finish.
- Serve:
Slice or shred the tender beef and serve it with the potatoes, carrots, and plenty of the garlic-herb sauce.
Tips
- Chuck roast works especially well because the slow cooking breaks down the connective tissue and makes the beef incredibly tender.
- Searing the beef before slow cooking gives the finished dish a deeper, richer flavor.
- For extra garlic flavor, add a few whole garlic cloves directly to the slow cooker.
- Don’t lift the lid repeatedly while cooking, as this can increase the cooking time.
- Leftovers can be refrigerated in an airtight container for up to 3–4 days.
