Even as a child, I loved potato pancakes. My grandmother often made them on weekends. While they slowly turned golden brown in the pan, their unmistakable aroma filled the whole house. They were usually served in the classic way with applesauce or herbed quark. Back then, I never would have imagined that you could one day make a proper main course from those same potato pancakes, one that even resembled pizza a little.

The idea came about rather by chance. After the potato pancakes were cooked, there were still tomatoes and cheese on the counter. Instead of packing everything away again, I simply topped the cooked potato pancakes with them and put them in the oven for a few minutes. As the cheese slowly began to melt and its aroma mingled with the roasted potatoes, I already knew that something special was going to come of it.

When I finally put the baking sheet on the table, everyone was a bit skeptical at first. Potato pancakes with cheese and tomatoes? That sounded unusual. But after the first few bites, everyone was thrilled. Wonderfully crispy on the outside, soft and juicy on the inside, topped with melted cheese, aromatic tomatoes, and finished with a creamy garlic-dill sauce – what more could you want? Since that day, this recipe has been a regular request in our house.

What I particularly like about this is that almost all the ingredients are already in most kitchens. Potatoes are one of those foods that you almost always have on hand. Add to that an egg, some flour, an onion, and a few fresh ingredients for the topping. That’s hardly more than that to put a truly satisfying family meal on the table.

That’s why I especially like to reach for this recipe on stressful days. While the potato pancakes are frying, the tomatoes, spring onions, and sauce can be prepared in advance. This way, a dish that not only tastes wonderful but also looks impressive is on the table in no time.

Even children surprisingly love these little potato pizzas. Perhaps it’s because they look a bit like mini pizzas. Everyone can even customize their potato pancake later. Some like a little more cheese, others add bell peppers or corn. It’s precisely this versatility that makes the recipe so popular.
