Directions

1. Preheat the oven to 400°F and line two baking trays with foil or parchment. Let the puff pastry thaw until pliable but still cool, and in a small bowl stir together the softened cream cheese and pesto until smooth.

2. Unfold the puff pastry on a lightly floured surface and spread the pesto cream cheese mixture evenly over the sheet, leaving a small border around the edges. Scatter the chopped sun-dried tomatoes over the top, then finish with the shredded mozzarella.

3. Starting from one long side, roll the pastry up tightly into a log. Chill the log for 10 to 15 minutes if it feels very soft, then slice into 1/2-inch rounds and place them cut-side up on the prepared trays, leaving a little space between each one.

4. Bake for 14 to 18 minutes, rotating the trays halfway through, until the pinwheels are puffed and deeply golden around the edges. Let them cool for a few minutes before serving so the filling can set slightly.

Variations & Tips

Add a savory meat layer: Thinly sliced salami or prosciutto can be layered over the cream cheese mixture before rolling for a heartier appetizer. Keep the layer light so the pinwheels still slice cleanly.

Use crescent dough instead: If puff pastry is not available, crescent roll dough works well and gives a softer, more bread-like result. Be sure to pinch the seams closed before adding the filling.

Chill before slicing: A short chill after rolling makes a real difference if the pastry has warmed up. Firmer dough holds its spiral shape better and keeps the filling from squeezing out.

Try a cheese swap: Shredded provolone, fontina, or a little grated Parmesan can be used in place of some or all of the mozzarella. Each one changes the flavor slightly while still giving you a nicely melty center.

Make-ahead tip: You can assemble the log several hours ahead and keep it refrigerated until ready to slice and bake. This makes the recipe especially handy when you are preparing for guests.
