Easy Ingredients
Thin chicken cutlets – 3
Bacon or pancetta – 12 to 15 slices
Italian cooked ham (prosciutto cotto) – 90 g
Smoked or provola scamoza – 80 g
Extra virgin olive oil – 2 tbsp
fresh rosemary – 1 sprig
Salt
Black pepper
Dry white wine – 5 cl (optional)
Preparation (Italian Method)
1. Prepare the chicken
Flatten the cutlets slightly
Season with salt and pepper
Place a slice of ham on each cutlet
Add a few pieces of cheese
Tip: do not add too much salt, the bacon and ham are already salted.
2. Form the rolls
Roll each cutlet

3. Sear in a pan
Heat the olive oil with the rosemary
Brown the rolls on all sides
Cook for about 7 to 8 minutes
Result: crispy, golden bacon.
4. Deglaze
Add the white wine (optional)
Let evaporate for 1 minute
5. Preheat
the oven to 180°C
Bake the rolls for 10 to 12 minutes
6. Rest & carve
Let rest for 2 minutes
Cut into slices
Serve hot
