Mix that glaze: Whisk soy sauce, honey, rice vinegar, sesame oil, cornstarch, water, garlic powder, and optional chili flakes until completely smooth.
Get the chicken golden: Pat the chicken dry and season with salt and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken in a single layer and sear for 3–4 minutes without moving it too much. Flip and cook until beautifully golden.
Cook the broccoli: Remove the chicken temporarily. Add the remaining oil and broccoli to the same skillet. Stir-fry for 3–4 minutes. Add 2 tablespoons water, cover, and steam for another 2 minutes so the broccoli stays bright green and tender-crisp.
Bring on the garlic: Add minced garlic and stir for about 30 seconds until fragrant.
Make it glossy: Return the chicken to the skillet and pour over the honey-garlic sauce. Toss over medium heat for 2–3 minutes until the sauce bubbles, thickens, and gives every chicken bite that gorgeous shiny golden coating.
Serve it up: Spoon everything into a wide bowl, distributing the broccoli naturally between the chicken chunks. Hit it with extra cracked pepper and dig in while it’s hot.
