Crispy Fried Cauliflower with Garlic and Parmesan: A Quick and Healthy Side Dish from the Oven

Roasted cauliflower with garlic and Parmesan cheese is a simple recipe that is becoming increasingly popular in Czech households. Roasted cauliflower adds a more intense flavor and a slightly crunchy texture, and when combined with Parmesan cheese, it creates a complete side dish or light appetizer. This recipe is perfect for those looking for a healthier alternative to classic deep-fried side dishes.

Ingredients

1 medium cauliflower (about 800-1000 g)

3 tablespoons olive oil

3 cloves garlic, crushed or finely chopped

1 teaspoon sweet ground paprika

1/2 tsp ground turmeric

Salt to taste

Freshly ground black pepper to taste Garlic

50 g finely grated parmesan cheese (about 1/2 dl)

Fresh chopped parsley or cilantro for sprinkling

Procedure  

Cooking method

Divide the cauliflower into smaller florets. Rinse them under running water, and then dry them thoroughly with paper towels or paper towels. A dry surface is important for proper frying.
Mix olive oil, crushed garlic, paprika, turmeric, salt and pepper in a bowl. Add the cauliflower florets and mix well so that they are evenly covered.
Preheat the oven to 200°C. Spread the cauliflower in a single layer on a baking sheet lined with parchment paper. Sprinkle with grated Parmesan cheese. Bake for 15-20 minutes. Flip or stir the florets halfway through baking to brown them evenly. For an extra crispy texture, you can turn on the grill function for 2-3 minutes at the end. Bake the cauliflower at 190°C for 12-15 minutes. Shake the basket halfway through baking to ensure that the vegetables are browned evenly.

Sprinkle chopped fresh parsley or cilantro over the finished cauliflower. Serve immediately while the top is still crispy. Fruits and vegetables
