Chicken Cordon Bleu
Ingredients:
Boneless, skinless chicken breasts 4
Swiss cheese slices 4
Delicatessen ham 4
Wheat flour 1/2 dl
Beaten eggs 2
Breadcrumbs 1.25 dl
Grated parmesan cheese 1/2 dl
Garlic powder 1 tsp
Paprika 1/2 tsp
Salt and pepper to taste
Instructions:
Prepare the chicken: Preheat the oven to 375°F (190°C) and grease a baking dish. Pound each chicken breast thinly (about 0.6 cm) between sheets of plastic wrap.
Assembly: Place a slice of Swiss cheese and ham on each chicken breast. Roll them up tightly and secure with toothpicks if necessary.
Breading stations: Set up 3 shallow pans. Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Bread the chicken: Roll each roll in flour, then dip it in the egg mixture. Make sure it is completely coated. Finally, roll it in the breadcrumb mixture, pressing gently to ensure good coating. Place the breaded rolls in a baking dish.
Bake and rest: Bake for 25–30 minutes, or until the chicken is cooked through and the breading is golden brown. Let the chicken rest for a few minutes before slicing and serving.
Serve: Enjoy your Chicken Cordon Bleu warm, garnished with fresh parsley if desired. It goes well with steamed vegetables, mashed potatoes, or a fresh green salad.
