1. Classic
savory shortcrust pastry Ingredients: 250 g flour, 125 g cold butter, 1 egg, 1/2 teaspoon salt, 2 to 3 tablespoons cold water.
Preparation: Mix the flour and salt. Add the cold butter cut into small cubes and sand the preparation with your fingertips. Stir in the egg and gradually add the cold water until you get a homogeneous dough. Form a ball, cover it with cling film and let it rest for 30 minutes in the refrigerator. Then roll it out and line it into your circle or mold, bringing the dough up well around the edges.
2. Savoury shortcrust pastry with parmesan
Ingredients: 220 g flour, 120 g cold butter, 60 g grated parmesan, 1 egg, 1 pinch of salt, pepper.
Preparation: Mix the flour, parmesan, salt and a little pepper. Add the cold diced butter and sand the dough. Stir in the egg and mix quickly without overworking the dough. Form a ball, cover with cling film and place it in the fridge for 30 minutes. Spread it out between two sheets of baking paper and then line it into the circles, pulling the dough up against the sides.
3. Homemade
quick puff pastry Ingredients: 250 g flour, 200 g very cold butter, 12 cl cold water, 1 teaspoon salt.
Preparation: Mix the flour and salt. Add the cold butter cut into large cubes without trying to make it disappear completely. Pour in the cold water and quickly form a paste. Roll it out into a rectangle, fold it into thirds and turn it a quarter turn. Repeat the operation 4 times, letting the dough rest for 15 minutes in the fridge if it becomes too soft. Spread it out and then run it into the circles.
4. Salted dough with olive
oil Ingredients: 250 g of flour, 8 cl of olive oil, 10 cl of warm water, 1/2 teaspoon of salt, 1 teaspoon of herbes de Provence.Preparation: Mix the flour, salt and herbs. Add the olive oil and then the lukewarm water gradually. Knead for a few minutes until you get a soft and smooth dough. Form a ball and let it rest for 20 minutes. Roll it out and place it in the circles, pressing down well at the bottom and along the edges.
5. Savoury dough with express
yoghurt Ingredients: 250 g flour, 1 plain yoghurt of 125 g, 80 g of melted butter, 1 egg, 1/2 sachet of baking powder, 1/2 teaspoon of salt.
Preparation: Mix the flour, baking powder and salt. Add the yoghurt, melted butter and egg. Mix until you get a homogeneous dough. Add a little flour if it’s too sticky. This dough does not require resting. Spread it out immediately and smash it into the circles.
6. Savory Herb & Seed
Dough Ingredients: 250 g flour, 120 g cold butter, 1 egg, 1 tablespoon sesame seeds, 1 tablespoon poppy seeds, 1 teaspoon dried herbs, 1/2 teaspoon salt, 2 tablespoons cold water.
Preparation: Mix the flour, salt, herbs and seeds. Add the cold butter and then sand the dough. Stir in the egg and cold water. Form a ball, cover it with cling film and let it rest for 30 minutes in the refrigerator. Spread it out and then slatch it into the circles, making sure to form straight edges.
Tip: After sinking the dough into the circles, place them in the refrigerator for 20 minutes before baking. The edges will hold better and fall less.
