Potato pancake is a delicious and flavorful main dish that the whole family will love. Ready in a few minutes, it is ideal for storing leftovers in the fridge: we have topped it with cooked ham and mozzarella, but you can vary the toppings and cheeses according to your tastes or the cheeses you have on hand. For a flawless result, use red potatoes and finely grate them, pressing them well to extract excess water. The only downside to this patty is that you have to unmold it, but if you have a double egg pan, it’s a breeze. You can also prepare it in a vegetarian version, without ham.
