Pea Flesh.
Ingredients:
1 kg of meat, cut into pieces
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, chopped
4 carrots in slices
3 potatoes, in cubes
4 cups of meat broth
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
1 cup frozen peas
Fresh chopped sauce
Instructions:
Brown the meat: In a large pot, heat the oil over medium heat. Add the pieces of meat and cook until golden brown on all sides. This should take about 5-7 minutes.
Fry the vegetables: Add the chopped onion and garlic to the pot. Sauté for about 3-4 minutes, until the onion is soft and translucent.
Add carrots and potatoes: Mix the carrots sliced and the cubed potatoes. Stir it all for a few minutes.
Add the broth: Pour the meat broth into the pot, making sure all the ingredients are well covered. Sprinkle the dried thyme, add the bay leaf and season with salt and pepper.
Cook over low heat: Bring the stew to a boil. When it starts to boil, reduce the heat to low and cover the pot. Leave to cook over low heat for about 1.5 to 2 hours, until the meat is soft.
Add Peas: About 5 minutes before serving, add the frozen peas and let heat.
Serve and decorate: Remove the bay leaf. Serve the stew in bowls and decorate with fresh chopped sauce.
