Oven-roasted potato wedges – a simple and irresistibly delicious side dish
Crispy on the outside, soft and fluffy on the inside – baked potato wedges are a classic side dish that goes with almost anything. With just a few ingredients and the right seasoning, you get golden-brown potatoes with fantastic flavor. Perfect for a midweek dinner, a barbecue, or as a delicious snack with a creamy dip.
Ingredients (4 servings):
800g – 1kg firm potatoes,
3 tbsp olive oil,
1 tsp salt,
½ tsp black pepper
, 1 tsp paprika powder,
1 tsp garlic powder,
1 tsp dried oregano or thyme,
½ tsp onion powder (optional),
chopped parsley for garnish.
Optional:
aioli,
garlic dressing,
tzatziki,
chili sauce.
Preparation
1. Prepare the potatoes:
Preheat the oven to 200°C (390°F).
Wash the potatoes thoroughly. For more flavor and crispiness, you can leave the skins on.
Cut each potato into equal-sized wedges.
Soak the wedges in cold water for 20–30 minutes to remove excess starch.
Drain the water and dry the potatoes thoroughly with a kitchen towel.
2. Season:
Place the potatoes in a large bowl.
Drizzle with olive oil.
Add salt, black pepper, paprika, garlic powder, and oregano.
Mix well so that all the potato wedges are evenly coated with the seasonings.
3. Bake:
Place the potato wedges side by side on a baking sheet lined with parchment paper.
Make sure they don’t overlap.
Bake for 35–45 minutes, depending on their size.
Turn the potatoes halfway through the baking time so they brown evenly and become crispy.
When the potatoes are golden brown and crispy, they are done.
4. Serve:
Sprinkle with fresh, chopped parsley.
Serve immediately while the potatoes are still hot and crispy.

Tip:
For extra crispy potato wedges, parboil the potatoes for 5 minutes.
Sprinkle grated Parmesan over them during the last 5 minutes in the oven – this adds extra flavor.
