For the dough:

250 grams of bread flour (or all-purpose flour, equivalent to 2 cups)
30 grams of butter (shortening) (2 tablespoons)
1/4 – 1/2 teaspoon of salt
120-125 grams of cold water (1/2 cup and 1 teaspoon)

For the lamination:

120 grams of unsalted butter or margarine (easy to find in any store)

Optional filling:
Chocolate chips and cheese

Alternatives: meat, ham, cream cheese, fruit, or any filling of your choice.

Step 1: Prepare the dough

In a large bowl, mix the flour with the salt.

Add the 2 tablespoons of butter and rub it in with your hands until the mixture resembles coarse sand.

Gradually add the cold water and mix until a smooth, homogeneous dough forms. Do not over-knead.

Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.

Step 2: Prepare the lamination

Remove the butter for lamination and place it between two sheets of parchment paper.

Use a rolling pin to roll it out into a thin rectangle. Refrigerate until firm but pliable.

Step 3: Incorporate the butter into the dough

Roll out the dough into a rectangle large enough to wrap the butter sheet.

Place the butter in the center of the dough and fold the edges over to completely enclose it.

Carefully roll out the dough into a larger rectangle.

Fold the dough into thirds, like folding a letter. Rotate the dough 90 degrees and repeat the process two more times.

Refrigerate the dough for 15 minutes between each fold to keep it firm.

Step 4: Roll and Fill

Once the dough is ready, roll it out to the desired thickness.

Fill it with chocolate chips and cheese, or any other filling you prefer.

Fold or roll it according to your desired puff pastry style and place the pieces on a baking sheet.

Step 5: Bake

Preheat the oven to 200°C (400°F).

Bake the pastries for 20-25 minutes, or until golden brown and crisp.

Let them cool slightly before serving.
