Pumpkin fritters are a traditional sweet treat, perfect to enjoy with a hot drink. With their soft, fluffy texture and sweet touch of sugar and cinnamon, they’re made to be savored!

For this recipe, you’ll need cooked, mashed pumpkin. You can boil, roast, or microwave it until soft. Once cooked, drain any excess water well so it’s as dry as possible. Mash the pumpkin with a fork until you have a smooth puree.

In a large bowl, add the egg and sugar. Beat for a few minutes until the mixture becomes fluffy and slightly pale. Add a few drops of vanilla extract or, if you prefer, some lemon or orange zest.
Stir in the pumpkin: Add the pumpkin puree to the bowl and mix well.

Sift the flour and baking powder directly over the pumpkin and egg mixture. Stir until the flour is incorporated; the dough will be thick at first, but it will soften as it absorbs the liquid ingredients. Gradually add the pumpkin cooking water, or milk if you don’t have any. Add only enough until you have a soft, slightly thick dough that can be handled with a spoon but isn’t too runny.

In a deep frying pan or saucepan, heat plenty of oil. It’s important that the oil is hot but not too hot, so that the fritters cook through without burning on the outside (medium-high heat).

Using two spoons, scoop small portions of batter and carefully place them in the hot oil. Try to make them roughly the same size so they cook evenly. Let the fritters cook until golden brown and fluffy, turning them over if necessary to ensure even cooking. Remove them and place them on a plate lined with paper towels to absorb any excess oil.While they’re still warm, roll the fritters in a mixture of sugar and cinnamon for extra sweetness and aroma. Tips for perfect fritters:

The dough should be somewhat thick but not too thick, so that you can easily form the fritters and they don’t fall apart when frying.
