Ingredients

. For fritters:
2 cups dried chicken (roasted chicken works well!)
1/2 cup onion finally chopped
1/4 cup hot pepper finally chopped (optional, sweets) 1/4 cup
of breadcrumbs (panko to make it more crispy)
1/4 cup grated parmesan cheese
1 large egg, beaten
2 cloves garlic, chopped
1 teaspoon chili
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
. Optional: 1/4 tablespoon red peppers to season

. To take again:
1/2 cup flour to use
1 extra egg, beaten (to paint with oil)
1 cup panko breadcrumbs
. Optional: 1/2 tablespoon garlic powder or Italian seasoning mixed with the grated pan

. To fry:
Vegetable oil, for frying
. To serve:
Dressing ranch, mustard with honey or hot sauce (to wet)
Step 1: Prepare the mixture.
In a large bowl, combine shredded chicken, chopped onion, brown pepper (if used), breadcrumbs, Parmesan cheese, beaten egg, garlic, paprika, parsley, salt, pepper and red pepper flakes (if used).
Mix everything until well integrated. The mixture should be held together when tightening; if it is too dry, add another tablespoon of beaten egg.

Take about 2 tablespoons of the mixture and shape it small burger, about 1.25 cm thick. Repeat with the rest of the mixture; you will get between 8 and 10 pancakes.
