If I had my way, every single brunch menu would have some sort of eggs Benedict and some sort of crispy potato. They’d preferably be on the same plate, but beggars can’t be choosers. Instead of facing perpetual brunch-themed disappointment, I decided to create these eggs Benedict hash brown bites to satisfy all of my cravings. This is the perfect option for brunch with a small group of friends or family, especially if you plan to have a few other faves to share, like tomato salad, lemon rolls, and Dole Whip mimosas.
Top tips:
This recipe keeps the hash brown part easy by simply baking hash browns in a greased muffin tin and smashing them together into a bite-sized bottom layer, leaving you plenty of time to nail the poached eggs and the hollandaise. To keep the poached eggs nice and tidy, don’t skip the step of straining the egg with a fine mesh strainer before poaching. This allows the excess white to fall away, leaving you with a uniformly poached egg that will fit perfectly on the hash brown base. To get the ham to the perfect size, I prefer using a biscuit cutter, but you can also just cut the ham into a 2″ square. Save the extra ham for an omelet, soup, or a grilled ham and cheese sandwich.
