In the 80s and 90s, homemade desserts had a unique flavor. My mother used to bake a particularly delicious cake every week, the “Cake Moelleux de Maman”: simple and yet irresistible, it was unanimously accepted, by young and old alike. Her recipe was simple, with wholesome, no-frills ingredients, but the taste was second to none.

In this article, I will share with you the recipe for the cake that marked the childhood of many of us, with all the aroma and sweetness of a timeless dessert.

Ingredients for a traditional
moist cake Here’s what you’ll need to make it, just like it used to be:

3 eggs,
180 g sugar,
200 g flour (type 00),
80 ml sunflower oil (or 100 g soft butter),
100 ml milk,
1 sachet of baking powder,
grated zest of a lemon (or vanilla according to your taste),
icing sugar for decoration.
✅Simple but balanced ingredients for a moist, fragrant and light cake.

Preparation

1. Beat the eggs with the sugar.

Beat the eggs and sugar with an electric mixer until light and fluffy.

2. Add the liquids.

Add the oil (or melted butter if you prefer the traditional version) and the milk at room temperature. Add everything, stirring constantly.

3. Mix the dry ingredients.

Add the sifted flour, baking powder and lemon zest. Gently fold in the mixture from the bottom to the top to prevent lumps from forming.

4. Pour the batter into the pan.
