Craving a quick, hearty meal that feels like your favorite restaurant burrito — without the takeout bill or all the dishes?
This One Pot Chicken Burrito Bowl has everything you love: tender chicken, fluffy rice, fresh veggies, and all the Tex-Mex flavors you could dream of… all cooked together in one pot!

It’s the kind of dish that brings everyone to the table — colorful, flavorful, and unbelievably easy. Perfect for busy weeknights, meal prep, or whenever you need a little fiesta on your plate! 🎉

Why You’ll Love This Recipe

  • 🌯 All in one pot: Less cleanup, more flavor.
  • 🍗 Perfectly seasoned chicken: Juicy, tender, and full of Mexican spice.
  • 🥑 Customizable: Add your favorite toppings — guacamole, salsa, or sour cream.
  • ⏱️ Quick & easy: Ready in about 30 minutes.
  • 🧡 Family favorite: Everyone can build their own bowl!

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 cup long-grain rice (uncooked)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • 1 can (14 oz) diced tomatoes with green chilies (like Rotel)
  • 2 cups chicken broth
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • ½ teaspoon chili powder (optional for extra heat)
  • Salt & pepper to taste
  • Toppings: shredded cheese, avocado, salsa, cilantro, sour cream, lime wedges

Instructions

Step 1: Cook the Chicken

In a large skillet or pot, heat olive oil over medium-high heat.
Add chicken pieces and season with taco seasoning, salt, and pepper.
Cook until lightly browned, about 4–5 minutes.

Step 2: Add Everything Else

Stir in rice, beans, corn, diced tomatoes, chili powder, and chicken broth.
Mix well, scraping the bottom of the pot to release all that delicious flavor.

Step 3: Simmer

Bring the mixture to a gentle boil, then reduce heat to low.
Cover and cook for 20 minutes, or until the rice is tender and the liquid is absorbed.

Step 4: Fluff & Finish

Remove from heat and let sit, covered, for 5 minutes.
Fluff with a fork, then top with shredded cheese, fresh cilantro, and lime juice.

Tips for Success

  • 🌽 Use the right rice: Long-grain white rice cooks evenly and stays fluffy.
  • 🍅 Don’t skip the tomatoes: They add moisture and flavor to the rice.
  • 🧀 Cheese matters: A mix of cheddar and Monterey Jack melts perfectly.
  • 🔥 Spice it up: Add jalapeños or a dash of cayenne for extra kick.
  • 🥣 Meal prep tip: Divide into containers — it reheats beautifully for 3–4 days.

Variations & Add-Ons

🌮 Steak Burrito Bowl: Swap chicken for thinly sliced steak.
🥬 Veggie Version: Skip the chicken and add sautéed peppers and mushrooms.
🧄 Garlic Lover’s Twist: Add 2 minced garlic cloves with the chicken.
🍚 Extra Creamy: Stir in a little sour cream or cream cheese before serving.

Serving Ideas

Serve your One Pot Chicken Burrito Bowl with:

  • Warm tortillas or chips for scooping
  • A drizzle of lime crema (mix sour cream + lime juice)
  • A side of guacamole or pico de gallo
  • Or just enjoy it straight from the bowl — it’s that good! 😋

Storage & Reheating

  • Refrigerate: Up to 4 days in an airtight container.
  • Reheat: In a skillet or microwave with a splash of broth or water.
  • Freeze: Freeze portions for up to 2 months — great for quick lunches!
