4 eggs,
120 g sugar,
100 g cornstarch,
100 g flour,
1 packet (1 piece) vanilla sugar,
1 teaspoon baking powder.
Preparation
Preparation:
First, separate the eggs from the egg whites. Then, beat the egg whites until stiff peaks form. Gradually add the sugar and continue beating until glossy peaks form.
Next, whisk the egg yolks with 3 tablespoons of water and gently fold them into the egg whites. Sprinkle the surface with a mixture of flour, baking powder, and cornstarch, and gently fold it in.
Spread the batter evenly onto a baking sheet lined with parchment paper and bake in a preheated oven.
Return temperature: 200 °C (390 °F). Top and bottom heat. Baking time: 10–12 minutes.
Sprinkle a kitchen towel (yuck, it’s damp) with sugar. Now place the ready-to-bake cookie on the towel, remove the baking paper, and immediately roll it up from the narrow side. Let it cool completely.
Once the cookie has cooled, you can roll it up and fill it. Fill it with jam or a creamy fruit mixture. Simply fill it and carefully roll it up using a kitchen towel. (Rolling is optional.) Decorate – and you’re done!
