Prepare the vegetables
Wash all the vegetables thoroughly. Cut the cabbage into large strips, peel the carrots and potatoes, and slice them. The leek should be thinly sliced, and the onion julienned.
Sauté the base
In a large pot, add a little oil or butter and sauté the onion, leek, and chopped garlic until very tender and fragrant.
Add the main ingredients
Add the carrots, potatoes, and cabbage. Stir well to blend the flavors. Then, add the whole sausages (you can brown them beforehand if you want a more intense flavor).
Season and simmer
Add the bay leaf, thyme, salt, pepper, and enough broth or water to cover all the ingredients. Simmer for about 45 minutes, until the vegetables are soft and the broth has absorbed the flavors.
Serve hot.
You can serve it with crusty bread or rice for a more complete meal.
Tips and Variations
If you prefer a vegetarian option, substitute the sausages with a meatless version.
Add a splash of white wine to the broth for added depth of flavor.
For a thicker texture, you can mash some potatoes before serving.
A Hug in the Form of Food
This stew is not only easy to prepare, but it’s also ideal for making in large batches and preserving portions. Every spoonful brings the warmth of traditional cooking and the satisfaction of a complete, comforting meal bursting with homemade flavor.
