Ingredients:

3 medium apples (organic, preferably)
1 liter of filtered or boiled water
2 tablespoons honey (optional, to speed up fermentation)
1 large glass jar (with wide mouth)
A clean cloth or napkin and a flirt

Preparation step by step:

1. Wash and divide the apples into large portions, including the peel and the center of the apple (without seeds if you prefer).
2. Place them in the glass jar.
3. Add the honey and pour the water until the apples are completely covered.
4. Cover the bottle with the cloth and secure with the garter (this allows it to breathe but avoid insects).
5. Let it ferment in a dark, warm place (like a cupboard) for 3 to 4 weeks.
6. Remove every 2 to 3 days with a wooden spoon to avoid mold.
7. After this time, strain the liquid and discard the apple scraps.
8. Replace the liquid in the bottle, cover it with the cloth, and let it ferment again 3 to 4 weeks.
9. When you have a strong smell and acidic taste, you are ready. Store in a glass bottle with a lid.
