Ingredients:
1 cup finely grated carrot
1 cup of sugar or 2 tablespoons of liquid stevia
1/2 cup of skim milk
1/2 cup of neutral oil
2 eggs
3/4 cup whole wheat flour
3/4 cup oatmeal (or extrafine oatmeal)
2 teaspoons baking powder
Juice and zest of 1 orange
1 teaspoon vanilla extract
Nuts to taste (optional)
Orange slices and thyme twigs (to decorate)
Preparation
1. Preheat the oven to 180°C (350°F). Grease a cake pan about 22 cm in diameter and cover the bottom with baking paper.
2. In a large bowl, whisk the eggs with the sugar or stevia until the mixture is smooth. Add the oil, milk, orange juice and vanilla extract, and mix well.
3. In another bowl, sift whole wheat flour, oatmeal, baking powder, orange zest and a pinch of salt.
4. Gradually add the dry ingredients to the wet mixture, gently beating until a homogeneous dough. Add the grated carrots and nuts if you use them.
5. Pour the mixture into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
6. Once out of the oven, let the cake cool in the pan for 10 minutes before demolding. Garnish with fresh orange slices and thyme twigs.
