The sparingly used chili pepper adds a subtle note without overpowering the vegetables.

1 white onion
450 grams of carrots
300 grams of zucchini
2 crazy teenagers
2 tablespoons of soy sprout oil
1 sugar
3 pieces of vegetable broth
about 1 liter of water
50 ml thick, fresh cream
Detailed preparation
Preparation (a crucial step):
Carefully peel the onion, garlic, and carrots. Finely chop the onion and garlic so they soften during cooking. Then, dice the washed carrots and zucchini into small, uniform cubes: This ensures even cooking and makes puréeing easier.
To caramelize carrots:
Heat olive oil in a large frying pan or saucepan over medium heat. Add the carrots, a pinch of paprika (if desired), and sugar. Cook for a few minutes, stirring regularly, until they are light brown and develop a sweet, rich flavor.
Add the herbs.
Stir in the chopped onion and garlic. Sauté until translucent and fragrant. Then add the zucchini and cook for another 2 to 3 minutes.
Gentle cooking:
Add about 1 liter of water to the pot, bring to a boil, and then add the vegetable stock. Reduce the heat, cover, and simmer for 15 minutes. The vegetables should be very soft but not fully cooked.
Purée the soup:
Remove the pot from the heat and purée the soup with an immersion blender until smooth, velvety, and homogeneous. Add a little water if needed to achieve the desired consistency.
Finally
: Stir in the crème fraîche, season with salt and pepper, and add chili powder to taste. Mix well, taste, and adjust the seasonings as desired.
Chef’s tip
: For an even tastier soup, you can replace some of the water with homemade broth.
If the soup is too thick, gradually add some hot water or broth.
A squeeze of lemon juice or a little mild vinegar just before serving can improve the taste.
Vegan version: Replace the fresh cream with coconut, soy or oat cream.
Spicy version: Add freshly grated ginger or a pinch of curry.
For a more nutritious version: Add a small potato or red lentils before cooking.
